Vintage Brut 2009
This 2009 Vintage Brut was born out of a difficult and challenging year. Timing of picking and careful fruit selection was critical to ensuring a high quality sparkling wine. Expect fresh, fruity flavours that have resulted in a crisp sparkling made from Pinot Noir grapes with low dosage.

Vintage Brut 2007
The Pinot Noir grapes for this 2007 Vintage Brut were all grown at the bottom of the Waratah Hills Main Paddock. The fruit retained high natural acidity at full sugar ripeness while developing delicate fruit flavours. The wine had developed complexity and flavour from extended maturation on yeast lees prior to disgorging by the traditional method. The primary
fruit flavours, combined with the
extended maturation on
yeast lees has resulted in
an elegant sparkling wine.
A mark of a quality sparkling
wine is a low level of
“dosage” or sugar needed
from the disgorging liqueur
to balance the wine’s acids,
flavours and textures. The
2007 Vintage Brut was
remarkable in that only 3g/L of
dosage was required to do this.
