Chardonnay
Chardonnay originated in the French region of Burgandy and today this variety is grown around the world. Being such a neutral grape many of the flavours are directly associated with the soil and the oak.
Waratah Hills Chardonnay is grown on our steepest paddock (called Top) which is a sweeping 3 acres of vines that are in a rich soil base, protected from the winds and exposed to full morning sunlight (north facing).
Chardonnay 2010
Whole bunch pressed to French oak barriques, the wine was then left on lees in barrel for 10 months and gently racked and lightly fined just prior to bottling. This chardonnay has flavours of nectarine, meal and a lovely spine of lime acidity. The wine has a mineral character and will develop more richness and complexity.
Chardonnay 2009
This 2009 Chardonnay was born out of a difficult and challenging year. Timing of picking and careful fruit selection was critical to ensuring a high quality wine. Barrel fermentation in new French oak and lees contact have resulted in a crisp wine with complexity and a textured palate. Expect a wine with fine natural acidity that will build in complexity and richness with time in the bottle.
Unwooded Chardonnay 2008
With such high demand for our
Chardonnay Waratah Hills introduced
an unwooded Chardonnay to the cellar door in 2008. This unwooded chardonnay is made from grapes grown near the Westernport Bay
area of South Gippsland.
Fresh, clean and crisp, this
unwooded Chardonnay has
flavours of grapefruit,
nectarine and passionfruit.
The wine has lively lemon
acidity and will develop
more complexity with bottle age.
